INGREDIENTS:
10 ounces package spaghetti pasta ( I used
angel hair)
1/3 cup olive oil
2 cloves finely chopped garlic
1/2 pint grape tomatoes halved
3 tablespoons chopped parsley
4 tablespoons capers
1/2 cup white wine
Salt & pepper to taste
Optional freshly grated parmesan
PREPARATION:
Boil the spaghetti according to directions.
While spaghetti is boiling, heat the olive oil in a pan over
medium heat.
Saute garlic for one minute.
Add capers & parsley and saute for an additional minute,
then add white wine and stir until evaporated.
Remove from heat, add sliced grape tomatoes and stir.
Drain pasta and add back to the pot.
Pour sauce mixture over pasta.
Stir gently until mixed.
Add salt & pepper to taste.
Serve with fresh grated parmesan.
